Tasty "little ears"


I know I've said before that broccoli is not my favorite vegetable, but there are a couple exceptions - and this is one (that and the use of rabe, instead of regular broccoli). This is an easy, all-in-one weeknight meal as it's got your veggies cooked in! Orecchiette means little ears in Italian...

Orecchiette with Sausage and Broccoli Rabe serves 2

couple tablespoons olive oil
2 raw sweet italian sausages (you can use hot, just omit the red pepper below)
1 large clove garlic minced
pinch red pepper flakes
a large handful of broccoli rabe coarsely chopped- this is the young not as bitter type if you can't find it you can use regular broccoli
about 1/2 lb. orecchiette pasta
about 1/4 cup grated parmesan

In a large pot heat the olive oil and squeeze the sausage from the casing then crumble into bite sized pieces. Let it brown over pretty high heat. Add the garlic, pepper and broccoli rabe, cover and cook about another 5 min. In a larger pot bring a lot of water to a boil and add salt. Cook pasta until it is slightly underdone and drain, but leave some water clinging to your "ears". Add the pasta to the sausage and veggies along with the cheese and toss until hot and coated. S&P to taste and serve with an extra sprinkling of cheese.
