Throw out that taco spice mix!

Since I was a little girl in Phoenix my mom made tacos at home with ground beef and the packaged taco seasoning mix - at least she fried her own shells! I've continued the tradition until sometime last year when I finally asked myself - what the hell is in this stuff and why can't I just make it myself? (funny thing is my friend Jen asked the same question at the same moment and came up with a different recipe - great minds think alike!) Anyway, this is now my recipe - so throw out the packaged msg stuff! P.S. yesterday I actually made these with ground turkey, no need to drain after cooking, just add to the onions and garlic and then add a little chicken broth to make it moist.

Beef Tacos serves about 4

2 tablespoons oil
1 small onion finely chopped
1 clove garlic chopped
1 tablespoon chili powder (I used Rancho Gordo's)
1 tablespoon ground cumin
1 lb. ground beef (Prather of course)
1/2 cup tomato sauce
s&p

Fry onions, garlic in oil until soft, then add spices and cook a couple min. Remove from pan to a bowl then fry the beef in the pan until lightly pink. Drain off the fat and add the onions and tomato sauce and cook about 10 min. S&P to taste. Then you can either fry corn tortillas (please don't buy the already fried ones!) or flour tortillas then top with all the fixin's - shredded cheddar or jack, shredded lettuce, chopped fresh tomatoes, chopped avocado or guacamole, sour cream, salsa, chopped onions - that enough for ya? Notice I leave out cilantro - I hate it - but if you must... just not if you invite me over!
