I could practically cry when I have food leftover and I end up throwing it out - good economy or bad! And of course I have to fight the inherited urge to freeze it right before it goes bad - see prior post! Since I still had the leftover grits from last weekend's meal but no sauce, I formed them into patties and fried them in a pan with a little butter and olive oil and served with an over-easy egg. If you really wanted to plan on doing this you could put your leftover grits (before adding the cheese) in a square pan and refrigerate overnight, then slice them into little rectangles and fry. My grandmother Daisy used to do this for me and served them with maple syrup.
Don't throw out the leftovers - fry them up!
