Lemon Cake for Eva

Baked this little cake for the first time for a friend's birthday - since I didn't get to taste I'm just assuming this time it's good - it definitely smelled good! Will have to hear back from Eva. Recipe adapted from Ina Garten

Lemon Cake

1 and 1/2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup plain yogurt - not non-fat!
3/4 cup sugar
3 large eggs
zest of 2 lemons
1 teaspoon vanilla
1/2 cup vegetable oil

Spray either a little bundt pan if you have one or a loaf pan with the baking oil and flour spray. Whisk together the dry ingredients and in another bowl whisk together all the wet ingredients. Whisk in the dry ingredients until smooth. Bake in pan about 40 min. When cool glaze the cake with 1/3 cup powdered sugar mixed with a couple teaspoons lemon juice.
