Thanksgiving SOS - Oldie but a goodie?

This was not going to be todays post, but I've had a special request. Remember the 70's? Well, picture bright lime green, because I don't have a picture of this one - although I do confess that I have a box of it here in my cupboard. Is it salad, is it dessert? It's not a vegetable - it's Pear Jello Salad! I have to say it is pretty tasty - go ahead, go for the total retro thanksgiving dish!

Pear Jello Salad

1 small package of lime green jello
1 tablespoon vinegar
1/8 teaspoon ginger
2 large ripe pears, peeled and cut into bit sized pieces (you can use canned)
8 oz package cream cheese at room temp

If you've never made jello before, here's the secret. In a large mixing bowl put the jello. Add 1 cup boiling water stir and let sit for a couple min. Then measure to equal 1 cup of ice in water add that and vinegar and ginger to the jello - this will get it to set faster. Remove about 2/3 cup of mixture to another bowl. Pour the rest into a 8 inch square pan and then slip in the chopped pears. Put that in the fridge. When the remaining 2/3 cup is almost firm beat it and the cream cheese with a mixer, it will be spotted and not totally mixed. Then pour that over the pear jello in the pan and return to fridge to set. Bring on the memories!
