I made this quiche the other day for lunch - it was really good even the next day for breakfast. I mostly followed the recipe listed, I just didn't roast the cauliflower as much - it really only needs about 15-20 min. total to make it browned and crispy. That was the first way I had ever even considered eating cauliflower - and it can be a side dish all by itself - make sure you keep enough for the quiche, as they are hard to resist snacking on hot out of the oven!
