Wow - I will be doing this again!


Pasta update - it was so fresh tasting! The definition of al dente! Only cooked it for 2 min. after it dried on the towel for a few hours. Sauce was by Jamie Oliver (I love him!) He puts broccoli in it and I had planned on it too but the broccoli that I got at the market today had way too many bugs - I mean I know it's organic - but this was over the top! I washed and washed and still saw little tiny bugs. It was just too much for me and I really didn't like the idea of them in my first trial run of fresh pasta - actually, I don't like the idea of them in store bought pasta either!

Pasta with Cheesy Sauce served 2

1/2 cup creme fraiche
2 oz Italian fontina, cut up
3 oz freshly grated parmesan
pepper
1 egg yolk

Bring a big pot of salted water to a boil and while it's heating up put a smaller metal bowl that will rest on the top and add the creme and cheeses so that they melt together. Remove and cook the pasta (doesn't have to be fresh pasta - I do feel a little crazy for making my own - so don't feel guilty - just get a good quality pasta, fresh or dried) drain the pasta when done - al dente! Add the egg yolk to the sauce and then toss in the cooked hot pasta, which will lightly cook the egg. Lots of fresh ground pepper!

Now I'm going to have to get going on my lasagna!!
