Pasta, Pasta, Pasta - never basta!
















Since I had made all that fresh pasta, I had to come up with multiple options to serve it. One of my favorite ways to do pasta is Pasta Telefono which is where you toss your hot pasta and tomato sauce with cubes of fresh mozzarella - that creates long "telephone" wires that string from your fork. Since I didn't have the mozzarella on hand and I did have some prosciutto, I fried the prosciutto chopped up in a non-stick skillet until crispy and topped the tomato sauced pasta with that one night. Another night I made an old standby that I referred to in an earlier post but never really said how to do it - I don't even have a name for it, I guess it could be Pasta Alfredo with Ham. Basically you take about 1/2 cup of cream and add 1 egg yolk. In a large pot put a tablespoon or so of butter and when it's melted add about 3/4 cup chopped smoked ham and lightly brown. Add the cooked pasta then the cream and toss on really low heat just to slightly warm then add about 1/2 cup shredded Parmesan. Serve with lots of fresh ground pepper and extra Parmesan.
