Snow Day!



Ok, I'm in Texas and stuck in the house because it's snowing! My mom's neighbor Pam skipped work too and she made us Green Chili Cheese Grits with a farm fresh egg over easy- well I said made us, I should say I texted and asked for a coffee and ended up getting invited over - and this is the only place I can get internet, so I'm just posting this quick to let you know I'm alive - not really cooking, but will post pictures for this later. Pam is willing to share her recipe...

Green Chili Cheese Grits

2 cups water to half cup grits - cook instant according to directions.
Drain a small can of chopped green chilis, grate 3/4 cup of sharp cheddar - or a cheese of your choice, s&p and a little garlic powder mix all this together. Add a tablespoon of butter, and maybe a little milk to get the desired thickness. If not serving right away, put in a buttered dish and top with some cheese and then bake for a little while in the oven. Serve with an over-easy egg on top.
