7-Up Pound Cake

My mom used to make this simple, versatile cake all year long. I thought right now it would be lovely with some whipped cream and mixed berries since the market is flooded with ripe strawberries, blueberries, blackberries.... some nice peach slices wouldn't be a bad choice either! Now, I actually used Sprite, as I had bought one of those mini cans in preparation for just such a day. I guess my loyalty to Coke doesn't extend to 7-Up because I would never consider a Pepsi substitution.

7-Up Pound Cake

2 1/2 cups of sugar (my mom's original recipe calls for 3 cups, but it's just too much, I like it less sweet)
3 sticks butter at room temp
5 eggs at room temp
3 cups flour
1 cup 7-Up
teaspoon vanilla

Cream the butter and sugar. Add the eggs one at a time and beat well after each. Add the flour 1 cup at a time, with about a third of the 7-Up until it's all mixed in, then add the vanilla. Pour into a buttered and floured bundt pan and bake at 325 degrees for 50-75 min, or until it's nicely browned on top and a toothpick inserted comes out clean.
