Popovers - I love these!! And they are easy to make!

They are basically individual yorkshire puddings. I made these to go with my pot roast last week (ummm can you say soak up that gravy baby!) We had a few leftover so I lightly toasted and put scrambled eggs inside for breakfast - perfect - even without gravy!

Popovers makes 6

1 cup flour
1 cup milk
2 eggs
1 tablespoon melted butter
dash salt
vegetable oil for pan

Ok - first off I admit I have a popover pan. If you don't you can use a muffin tin instead. Mix together all the ingredients except the vegetable oil to make a thin batter. Heat the pan in the oven at 350 degrees and when it's hot pour a little oil in each space and then pour in the batter about 1/2 way up. Bake about 30 min, until puffed up and golden. Serve hot - or leftover the next day with some scrambled eggs!
