Linguine and Pesto

Another perfect union! The silky-ness of the linguine with the crispy bite of the green beans and the tender texture of the red potatoes - heaven. I have to say, I'm usually a spaghetti girl, but I happened to have a good italian brand package of linguine and I tell you this was the perfect sauce for it - it coated and clung to every noodle!

Linguine with Pesto, Potatoes and Green Beans serves about 2

about 1/4 cup of pesto (easy recipe, but use a good store bought if you want to cut time - or make a big batch of this and freeze in cubes to use anytime)
2 or 3 red potatoes unpeeled and sliced
1/4 pound or a handful of green beans (I used yellow, but you can't really tell)
1/2 pound linguine
parmesan

Bring a large pot of water to a boil and add about 1 teaspoon salt. Put in the potatoes and let them cook about 10 min. When they are almost done add the green beans and cook another 2 min. With a slotted spoon remove the potatoes and beans from the water and set aside. Bring the water back to a boil and add the pasta and cook according to directions, maybe a min. less, so it's al dente. Get a ladleful or two of pasta water and set this aside. Pour the noodles out into a strainer then return to the pan along with the pesto, potatoes and green beans and toss to coat adding the reserved water as you go to make a creamy sauce. Serve with extra parmesan. I think Richard had third helpings on this he loved it so much!
