Peaches, Peaches, PEACHES!!!



















I got this case of enormous peaches from the farmer's market for only $11 - see you can get good deals at the Ferry Building Farmer's market! I ended up making preserves and one little jar of syrup - not to mention eating quite a few ourselves. They were the best I've had, perfect too - not #2's. I'm waiting for a big bowl of good vanilla ice cream...

Peach Preserves

5 pounds ripe peaches
2 cups sugar
1/4 cup lemon juice

Bring a pot of water to a boil and then cut an x in the bottom of each peach and drop into the water for about 1 min, then transfer to an ice bath. Slip the skins off and remove pits and slice into about 8 slices. Bring peach slices, sugar and lemon juice to a boil and cover and let sit - unless it's super hot where you live, then put it in the fridge. Bring them back to a boil skimming the foam occasionally. Cook about 20 min. Fill sterilized jars with peaches and some syrup, with any leftover syrup boil down and save as a sauce. Water bath can them for 10 min.
