I made this the other night when our friend Linda was in town. It was quick and easy and very tasty. I got these cute little zukes and yellow squash at the market and just chopped them into bite sized pieces. Having the veggies in the dish made it lighter and not as rich as a usual carbonara. I told you I'm on a Jamie Oliver kick! Zucchini Carbonara (I didn't have penne, so I used Eduardo's pasta and hay.) The zucchini fried in the pancetta and olive oil was pretty tasty all by themselves!
