Scalloped Potatoes - plus the kitchen sink!

Here I am again with adding whatever is left in the fridge! This time I had a little Prather smoked ham, some red peppers I roasted and a couple ears of corn. In a bowl I mixed together the chopped ham, peppers and corn. I first put in one layer of sliced yukon gold potatoes and then a layer of the ham/corn mixture, then another layer of potatoes - this went on for about 4 layers ending with the ham/corn. I then poured over some whole milk, almost to the top, dotted with a little butter and baked at 350 degrees for about 45 min. It was good. I really liked the peppers and ham, but I have to say next time I would leave out the corn - it added a weird texture and unexpected crunch - other than that it was really tasty. You never know what's going to end up when you use everything but the kitchen sink!
