Strawberry Bread - I love a quick bread!

This time of year when I know the strawberries are about to go away, I can get a little crazy and buy a whole crate. So now I have more strawberry jam and these little strawberry tea cakes to remind me of what I'll be missing in a couple months. I found this recipe in a Lost Recipe cookbook.

Strawberry Bread 2 regular loaves or 5 small

3 cups flour
1 tablespoon cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
4 eggs
3/4 cup sugar
1 cup vegetable oil
2 cups strawberries chopped (don't use frozen, too much water, but you can freeze the bread after it's cooked)
1 cup chopped pecans (I did 1/2 the loaves with nuts half without - both were good)

Whisk together the dry ingredients in a large bowl. In another smaller bowl whisk the eggs, sugar and oil. Add the egg mixture to the dry and stir until well blended. Mix in strawberries and nuts if using. Pour into buttered and floured (I cheat and use the spray kind) loaf pans and bake at 325 degrees for 45-55 min for regular loaf and 25-30 min for the small ones. The small loaf pans really come in handy, I found a set of 6 non-stick that are great - then you can give a friend a whole loaf and still have some leftover!
