Sometimes the simplest of ingredients are the best- ok most-times! My friend John of Far West Fungi gave me a little basket of oyster mushrooms to try this last weekend and I decided to keep it simple to get the unadulterated taste of these tasty treats. In my favorite frying pan I melted a little butter and a little olive oil, when it was hot I added the oyster mushrooms and cooked them on medium high until browned and tender - just about 7 min. I sprinkled them with my favorite maldon sea salt, some fresh ground pepper and a tiny splash of dry sherry. I toasted some Acme Walnut Wheat bread with a little butter and topped it with the mushrooms. Perfect segway into fall! I served this on the side with my fresh shell bean and barley soup. At total vegetarian meal - one of the few I make!
