Breakfast the next day!


Or - what to do with the leftover twice baked potato stuffing! I made a little indent in the potato mixture then cracked in an egg. I baked it for about 18 min at 375 degrees - just watch it - it's tricky to get the whites done and still have some runny yolk. Why is it that you can't fit all the mashed potatoes back into the shells? Who cares when you can do this with the leftovers?!
