It looks a little weird but the taste is amazing!

I found this recipe for Catalan Butter written down on a post it - and I have no idea where I got it. Thank god I didn't lose it because it is amazing!!! It's like a compound butter with tons of stuff mixed in - I just did it on toasted ciabatta but it would be great on grilled fish, chicken, even a steak! The flavors just keep coming - every bite is an explosion! It's best served a little cold, don't melt it on the bread.

Catalan Butter

3/4 stick unsalted butter at room temp
2 hard boiled egg yolks only
2 or 3 chopped sun dried tomatoes in oil (I used my roasted tomatoes)
1 tablespoon of the tomato oil or some olive oil
6 green olives pitted and chopped
4 anchovy filets finely chopped
1 tablespoon capers chopped
2 teaspoons fresh rosemary chopped
2 teaspoons lemon juice
sprinkling of red pepper flakes to taste

Mash all the ingredients together. Form into a roll and wrap in waxed paper and then use rounds to place on top of grilled meats or I put in a butter keeper to spread on grilled bread. Also it freezes well, so make a double batch - you are going to love it!!!
