Grilled Salmon with Dill pickle butter

I recently made some refrigerator dill pickles that I loved so I remembered this grilled salmon recipe -adding to this I had the first brussel sprouts of the season with a couple leftover cooked potatoes sauteed with peppers and leeks and my meal was made! Simple, delicious and tasty!

Grilled Salmon with Dill Pickle Butter serves 2

3 tablespoons butter at room temp
1 small dill pickle finely chopped
1/2 teaspoon tarragon dijon mustard (I love this green mustard but you can use the plain dijon)
1 salmon filet, skin on about 3/4 pound
s&p
splash of olive oil
skwirt of lemon juice

Mix the butter, pickle and mustard in a bowl and set aside - I didn't end up using all of it so I froze the rest for next time. Sprinkle the fish with s&p then olive oil and grill about 7 min total, starting skin side down. Top with a dollop of the butter and serve.
