Leftover change-up!

While my dear friend Julie was visiting from Phoenix I made my roasted Potato Sausage and Tomato dish. We had just driven up from the city and wanted to stay in and this was a quick and easy meal. Since we had a little bit of leftovers I re-invented them the next morning by sauteing some peppers and onions and then adding the chopped sausage and potato mixture - the cooked tomatoes made a nice sauce that brought it all together and topped with a fried egg - perfection. No extra ketchup needed! Loved having you Jules!
