Ode to a good egg

I've found a new place to buy eggs up here called Little M Farms and boy are they good - dark yellow yolk and super fresh. This fall I made some piperade and froze it so it was easy to make this Beans and Egg dish. The real trick is to not overcook the yolk, but have the whites done. Check it before the timer goes off. Eggs for dinner? YES!
