Another variation on the Mediterranean


Since my local farmer's market is closed for the winter I ventured out to the Santa Rosa farmer's market and wasn't disappointed. One big plus is they have an amazing fish monger there - lots of variety including freshly smoked salmon. This day I bought a small piece of swordfish and decided to cut it into small chunks, marinate in my greek-style sauce and thread onto skewers and grill. I already had all the fixings to make my favorite lamb skewers but when I saw this swordfish I decided to try something new (I saved the ground lamb for a ragu - stay tuned!) Quickly grilled so it was juicy and tender I added a grilled pepper and then spread the warmed flat bread with a roasted red pepper hummus (so easy to make your own just add a couple roasted peppers to the food processor) topped with the fish and pepper and some arugula, drizzle with olive oil and a squirt of lemon juice - heaven! Variety is the spice of life!!!
