This was such a simple fantastic meal. I adapted it from this recipe. I kept the green beans and the manchego rice the same - loved the rice! As for the pork chops - I sprinkled them with smoked paprika, salt and pepper and a little olive oil and grilled. I had a bunch of fresh red peppers so I grilled them earlier and peeled. In the blender I put 1 large roasted, peeled pepper a little olive oil some parsley, 1 small clove garlic, few marcona almonds and a dash of sherry vinegar and pureed. I just kept this at room temp and topped the chop with it. Perfect Spanish meal!
