For many years I've made this cake for my friend Lydia's bday celebration in December. She was one of our first neighbors in SF and lived above us on Hyde St. What a fun building that was! She had the top floor with a roof garden and threw the best parties. My Harvey Wallbanger was always such a big hit - I always kind of hated that it was a mix. But what the hell - it tastes damn good. Happy Birthday Lydia! I miss our Hyde street hangout!
Harvey Wallbanger Cake
1 package yellow cake mix (yes, I know - don't even say anything.)
1 small package instant vanilla pudding (ditto)
1 cup canola or vegetable oil
4 eggs
3/4 cup orange juice
1/4 cup vodka
1/4 cup Galliano (must have - that's what makes it a wallbanger)
Put the dry ingredients in a large bowl. In a measuring cup mix together all the wet and then add to the dry and mix a bit, but it doesn't have to be totally smooth. Bake in a 350 degree oven in a greased and floured bundt pan for about 45 min. Meanwhile mix together in a little bowl 1 tablespoon each of OJ, vodka, and Galliano and then whisk in 1 cup of powdered sugar. When the cake is done leave it in the pan and poke a long skewer into it, making holes all over then pour in the glaze. Let cool and then turn out onto a plate. Watch it disappear.
