You might be a little crazy if...

Well, maybe not crazy but as my husband said "Who cooks a whole thanksgiving meal the day after thanksgiving?" Me for one. I have to say it really is one of my favorite meals and a bowl of left-over mashed potatoes, stuffing and turkey all covered in gravy - I think I could eat that for weeks (or at least 3 days ; )

I love going to our annual thanksgiving day at the Karageorge's house but I need MY stuffing and I need Left-overs oh and BROTH - I adore turkey broth. So the day after I got up late then popped our little 9 pounder in the oven for a little less than 2 hours and we had our own little private feast - on china and everything! It was fun - and yes I enjoyed eating it for days!

Cornbread Stuffing
Mashed Potatoes
Roasted Whole Turkey
Roasted Carrots and Brussel Sprouts
Icebox Rolls
Waldorf Salad

Ok, I confess I did not make this all in one day. Stuffing was made on Wednesday before with my friend Lizzy, and so were the rolls - I always have to bring these to the Karageorge day and I had some dough left-over - so the rest was easy!
