When I think of the stuff that my mom used to try to get me to eat in the 70's - yuck - it was straight out of a jar! Now I make my own Pimiento Cheese and I'm obsessed with it! It can be served so many ways - as simple as on a cracker or packed into celery but my current favorite way to eat it is as a grilled cheese sandwich. Just spread some on the buttered bread slices then grill in a pan until browned. Then you can add a slice of tomato or if you are feeling low on cholesterol add a couple slices of cooked bacon!
Pimiento Cheese - makes quite a bit, will keep in the fridge for a week
8 oz of sharp cheddar cheese shredded - makes about 2 cups
1/2 cup finely chopped roasted red peppers (I roast my own, but if you don't have the time or inclination, make sure you buy a premium jar of peppers whole and then chop yourself)
1/4 cup mayonnaise
1/4 teaspoon celery salt - if you can find it Allstar Organics has the best!
Just mix it all together.
rebecca, from the Texas contingent, for a bit of a bite, add some chopped green chilis, or for the more adventuresome, some chopped jalapenos. For a really different taste, try it on raisin or cinnamon bread. Trust me, it is really a unique and great flavor.....
