What's in the fridge for dinner?


After working all day, who really wants to have to cook dinner? Actually, after working all day, who wants to go out for dinner? Nothing is more satisfying at the end of a long day than just pulling a few things together to make a quick meal - in your pajamas! Tonight's inspiration is from Nigella Lawson;  you should have all the ingredients on hand. 

Potato Carbonara serves 2

about 1 lb. potatoes - any kind you have on hand - I used some fingerlings
3 slices bacon
2 eggs
1/2 cup shredded cheddar or any other leftover cheese you have gruyere would be good too.

I didn't bother peeling, just cooked the potatoes in salted water for about 15 min. or until tender (use cooked leftovers if you have them). Cook bacon cut up in pieces in a large skillet, then add the cut up potatoes and toss until a little browned (if you have a bottle of white wine open splash in a little). Beat the eggs with the cheese. Remove the pan from the heat and pour the egg/cheese mixture into the pan with the potatoes; toss to get a creamy sauce - don't let it turn to scrambled eggs! Serve immediately with ketchup if you want. And don't forget lots of fresh ground pepper!
