Comforting soup for a stormy day


I made this soup last night as it was a windy rainy day yesterday and that's the best time for a hearty soup.

Hearty German Potato Soup serves 6

1/4 cup vegetable oil
1/4 cup flour
1 small onion chopped
1 stick celery chopped
1 teaspoon hungarian paprika
1 garlic clove chopped
4 medium baking potatoes peeled and chopped into cubes
4 cups water
1/4 pound of smoked ham chopped (use about one large 1/4 inch slice)
1/2 cup sour cream

Make a light brown roux out of the oil and flour (heat oil in a large pan and add the flour, cook stirring until it turns light brown in color) then add the onions, celery and paprika. Saute until soft and then add the garlic for a min. Stir in the potatoes until covered in roux. Add the water and ham and simmer on low for 45-60 min. until the potatoes are soft. Before serving stir in the sour cream and salt & pepper to taste.
