I know this is an English thing, but it is the perfect way to use up your various thanksgiving leftovers. It's basically a hash that you could serve for breakfast with a fried egg and ketchup or for dinner with some grilled sausages and some mustard. No real recipe, since it just depends on what you have but I will try to outline the basic principle. You want about 60% potatoes to hold it together so take your mashed potatoes or roasted potatoes and add cooked carrots, brussel sprouts, turnips, rutabagas, parsnips even a little stuffing. Mash this all up, not into a total puree, but so it has little bits of the veggies still. I usually add a finely chopped onion to the mix too. If you want to add something that is not cooked, just boil it in a little water until tender then add to the mix. Heat a frying pan until hot and add a good glug of oil then the hash and let cook until brown on the bottom. Then I just turn over sections adding a little oil if needed and keep turning until it is crispy and brown all over.
