What's in the fridge for dinner? AGAIN!


Today I did a test run of the White Beans w/ Roasted Lamb Shanks that we're doing for the next Market Supper. I'm letting it sit overnight and serving it tomorrow while my Aunt Dolly is in town - so that left me with "What's in the fridge for dinner?" Of course that's a common question for a lot of people, I'm sure. I do tend to plan meals ahead, shop and make sure I have all the stuff I need but even I sometimes don't have a plan. (I'm counting "planning" as knowing I have leftovers in the fridge!) Anyway, I bought Smoked Pork Chops yesterday from Prather - they're new. I had some potatoes so I made this dish I'm going to call Pork Chop Casserole. It's basically scalloped potatoes with pork chops on top - just another variation on pig meat and potatoes! What's not to love?


Pork Chop Casserole serves 2 w/leftovers

tablespoon butter
3 large baking potatoes
2 smoked pork chops (these are fully cooked)
1/2 to 3/4 cup cream or milk
s&p (go easy on the salt, as you can never be sure how salty the chops are)

Slice the potatoes thinly. Butter a large baking dish and layer in the potato slices. Top with cream and s&p. Bake the potatoes for about 25 min. Then put the pork chop on top and bake another 15-20 min or until the potatoes are done. Serve with a simple green salad.

Post Script: OMG - these pork chops were amazing! Almost like ham, totally tender with a little maple sweetness! We ate the meat off the bones like they were ribs.
