Cookies - let me count the ways...

There is nothing like a freshly baked cookie. These are adapted from Nigella and they are lovely - even if there is no chocolate involved!

Peanut Cookies makes about 25

1/3 cup brown sugar
1/2 cup butter
1/4 cup vegetable shortening (this really makes them tender)
1/2 cup peanut butter
1 egg
1 teaspoon vanilla
1 cup plus 2 tablespoons self-rising flour
about 4 oz of salted peanuts (I buy these Virgina Williamsburg lightly salted - they are pricey, but delicious!)

Beat butter, sugar, peanut butter, egg and vanilla until mixed. Add the flour and stir until together then stir in peanuts. Drop by a small ice cream scoop or about 1 teaspoon of batter. Press down with a glass that is dipped in oil and then a little extra brown sugar to make them flat. Bake on cookie sheet with a silpat at 375 degrees for about 8-10 min. Cool on a rack.

  1. Hello Dear, have enjoyed reading your blog and recognize some of the family recipes. Talked to your mom and have tried to reach you, but don't have the right email address I guess. It keeps coming back. Can you email me please, I lost all my gmail while in Thailand, am back and in SF right this minute, leaving in 3 hours for Costa Rica. blessings Dolly
