Cookies - let me count the ways...


There is nothing like a freshly baked cookie. These are adapted from Nigella and they are lovely - even if there is no chocolate involved!

Peanut Cookies makes about 25

1/3 cup brown sugar
1/2 cup butter
1/4 cup vegetable shortening (this really makes them tender)
1/2 cup peanut butter
1 egg
1 teaspoon vanilla
1 cup plus 2 tablespoons self-rising flour
about 4 oz of salted peanuts (I buy these Virgina Williamsburg lightly salted - they are pricey, but delicious!)

Beat butter, sugar, peanut butter, egg and vanilla until mixed. Add the flour and stir until together then stir in peanuts. Drop by a small ice cream scoop or about 1 teaspoon of batter. Press down with a glass that is dipped in oil and then a little extra brown sugar to make them flat. Bake on cookie sheet with a silpat at 375 degrees for about 8-10 min. Cool on a rack.
