Egg Fu Young - one of Richard's favorites.


I found the recipe for this a long time ago in a funny little "Oriental" cookbook and it's been on the favorites list ever since. I haven't mentioned that list before, but as I make so many new things all the time and it's easy to forget them, I keep a list in a journal of our "favorites"; things I make again and again - and where to find the recipe! This is really easy and good and if you have any leftover it makes a yummy breakfast the next day! I'm sure it's nowhere near a real recipe for Fu Young - in fact, I'm pretty sure this was something made up in American Chinese restaurants anyway! Definitely make the sauce - it makes the dish. Serve each "omelet" over steamed rice.

Egg Fu Young - or if you prefer Asian Style Omelet serves 2 with leftovers

1/2 inch piece of fresh ginger, peeled and finely chopped
1 green onion finely chopped
5 whole water chestnuts diced
1/2 pound of ground pork (or could be small raw shrimp chopped)
couple tablespoons soy sauce
couple tablespoons oil
5-6 eggs

In a saute pan cook the pork until it's just slightly undercooked adding the ginger and green onion during the last min (or lightly cook the shrimp). Remove to a bowl and add the water chestnuts and soy sauce. When it's cooled beat the eggs and add to the bowl. Heat the pan again and add a little oil. Pour in a ladleful of the egg mixture and let cook on one side then flip and cook about 2 min. per side. Continue making the omelets and serve each over a mound of rice with sauce on top.

Sauce

1/2 cup chicken broth
1 teaspoon soy sauce
1 teaspoon spicy chili sauce
1 tablespoon ketchup
2 teaspoons cornstarch

In a small sauce pan heat all ingredients to a gentle boil and cook until it is thick and clear.

Post Note: Ok - I hesitate to even post this picture as it doesn't look that appetizing... but honestly it was delicious. By the time I took this picture my sauce had cooled so it's a little weird looking - oh well, at least you get the idea - and since no one has offered me a book deal yet, you're just going to have to put up with my amateur photos!
