Leftovers for breakfast - it's not cold pizza!

Richard is so smart! Yesterday morning when we were in bed contemplating what to have for breakfast he said - what about the Green Chili Hominy you made last night? And I said - ohhh, how about baked with an egg in the middle? And voila - breakfast was served! At our house everything tastes better with an egg on top - made a frozen pizza from Trader Joe's special a few nights ago. This also applies to bacon - makes everything better! This version of the hominy was actually made with dried posole - which you have to soak overnight and then cook for about 3 hours - but what a difference - it was really toothsome. Just warmed the hominy a little then made a well and put in a pretty Soul Food Farm egg and baked in the toaster oven for about 7 min. It's so tricky to get it right - white cooked, yolk runny .
