Bean Soup - couldn't be easier

I know it's not the fall, or deep in the winter - but I still like a good old fashioned bean soup - and besides, SF has plenty of cold foggy nights ahead this summer! I've said it before, if you don't have a crock pot - go to Target and get one. This makes it super easy to do this and many other recipes. All I did for this was get a bag of mixed dried beans and add a smoked ham hock (Fatted Calf) I had these beans from Honey Baked Ham Company; I didn't use the spice packet because who knows what's in it, and I like the clean simple flavor of the beans and pork. Just rinse the beans put in the crock pot add the ham hock and cover with a couple inches of water. Let this cook for about 6 hours on low; remove the ham and shred the meat back into the pot with the beans. Season to taste with with s&p. If you want, you could sprinkle a little parmesan cheese on top. Now you have your easy weeknight meal.
