Paglia e Fieno - that's Straw and Hay pasta to you


Just another little variation on a cream based pasta sauce - yet it's not too rich even with all the cheese - I think the peas lighten it a bit...

Paglia e Fieno (name refers to the 2 colors of pasta) serves about 3

couple tablespoons butter
1/4 onion finely chopped
about 3 oz of prosciutto thinly sliced and chopped
1/2 cup cream
handful of fresh peas
s&p and sprinkling of nutmeg
small package of Eduardo's Straw and Hay, green and white - I love their dried pasta - made in SF!
about 1/2 cup shredded parmesan

Saute the onion in the melted butter in a large saute pan until soft. Add the prosciutto and cook until a little browned. Pour in the cream and let cook a couple min. then add the peas and cook just another couple min. (I like my peas al dente!) Taste and season - may not need salt as the prosciutto can be salty. Cook the pasta according to the directions, drain and then add to the pan and toss with the sauce. Sprinkle in the cheese and serve! How cute is it with all those bright colors?!
