Simple yet Complete

I continually go back to this planked fish - either salmon or steelhead and then just change up the sides. This rice is really simple but adds a little something extra to the meal and then since it's zucchini season, I cut up a few small patty pan squash, made a simple mustard dressing, skewered them with a sweet pepper and grilled them. Simple, complete and delicious.

Caramelized Onion Rice

tablespoon butter and tablespoon olive oil
1 onion thinly sliced
1 cup basmati rice
couple cups chicken broth

Saute the onion in the oils until soft, lightly browned and starting to caramelize. Add the rice and let it toast a little, then pour in the broth, cover and cook until done about 15-20 min.
