Baked, not Fried chicken wings - just as good!

At Christmas, I gave my friend Lindsey a jar of my Hot Pepper Jelly and she told me that she used it to coat chicken wings - I thought it was a great idea, so I tried this recipe and loved it. Soooo much easier to bake rather than fry and they were just as crispy and delicious - slightly sweet, slightly spicy. My pepper jelly is pretty mild, so I added a dash of hot sauce.

Hot Pepper Jelly Wings serves 4

couple tablespoons flour
1/2 teaspoon salt
2 pounds of chicken drumettes or little wings or a combo
2 tablespoons butter, melted
2 tablespoons hot pepper jelly, melted

Line a large baking sheet with foil and coat with a little oil. Toss the wings with the salted flour and then put in a single layer on the sheet and bake at 450 degrees for about 35-40 min, turning occasionally so they evenly brown. When done, remove to a bowl and toss with the butter/jelly mixture - adding tabasco to taste. Serve hot with lots of napkins - it's a sticky mess!
