Curry Vegetable Surprise


Ok, the surprise being whatever you have left in the fridge! I made this when I was leaving town so Rich would have something to eat - he almost finished it - but I'm sure he was sick of it by the end! This is good by itself over rice or with some grilled curry chicken.

Curry Vegetable Stew serves 6 (or Rich for days!)

couple tablespoons olive oil
1 inch piece of fresh ginger, finely chopped
1 small serrano pepper, remove seeds and finely dice
1 small onion, finely chopped
1 red pepper, chopped
2 tablespoons curry powder
1/2 teaspoon cumin seeds
1/2 teaspoon cumin powder
1 small head of cauliflower, broken into 2 inch pieces
4 small red potatoes cut into quarters
1 can garbanzo beans, drained
1 can diced tomatoes
1/2 pound green beans

In a large pot heat the oil and add ginger, serrano, onion, pepper and saute about 5 min. Add spices and about 1/2 teaspoon salt and cook until fragrant. Pour in 1 cup water add the rest and let cook on low for about 25 min, or until vegetables are tender. Serve over rice.
