Oldie but a goodie

I've made this a million times, ok that's an exaggeration, but I have made this a ton and it's always a big hit - and it's soooo easy! We had our dear friends over for John's birthday last week and since it was a friday, I was trying for simple and not planning on making an appetizer. Then I saw this jar of marinated artichoke hearts in the pantry (I'm trying to use up my store of hoarded food) and remembered this oldie but a goodie artichoke dip. I usually made it as a crab and artichoke dip by adding a small can of crab meat, but tonight I just went with the chokes and it was amazing - the 4 of us finished the whole thing! I served it with just some fresh baguette slices.

Hot Artichoke Dip serves 4-6

1 large jar marinated artichoke hearts drained (about 12 oz)
1/2 cup mayo
1/2 cup grated parmesan
couple tablespoons cream
1 roasted red pepper chopped

Chop the hearts and then mix with all the ingredients. Spoon into a small baking dish and bake at 325 degrees for about 25 min. or until bubbly and browned. Serve hot with crackers or bread. Could it be any easier?! If you want to get really fancy, add some crab to the mix before baking and maybe a squirt of lemon juice.
