Sausage and Peppers!

One night last week I was going to make my usual Spaghetti with sausage meatballs, but then I came across a couple sweet peppers that needed to be used, so I switched it up and made this - served on top of some creamy polenta instead of noodles. Sausage and Peppers serves 2

1 sliced red or yellow bell pepper or a mixture
2 italian sausages - you could leave them whole, but I made them into little meatball size bites
olive oil
handful of cherry tomatoes

Saute the peppers (and some onions if you like) in a little olive oil. Add the sausage and brown until done. Toss in the cherry tomatoes just until warm. Serve over some polenta.

Polenta

1/2 cup polenta
2 cups water
salt
couple tablespoons butter
1/4 cup parmesan

Cook the polenta in the water on low, stirring occasionally - watch for volcano like explosions - it's hot! It should take about 30 min. Stir in butter and parmesan and season to taste.
