Pork Ghoulash - Boo!


I was driving Richard crazy when I made this for Halloween - I kept saying "Ghoul - lash". However you say it - it was delicious! First night I served it over rice, but to change it up for the 2nd night I used egg noodles - and that was my favorite night.

Pork Ghoulash serves 6

4 pounds pork shoulder cut into large cubes
couple tablespoons olive oil
1 large red onion thinly sliced
3 tablespoons smoked paprika
1/2 teaspoon caraway seeds
1 teaspoon oregano
salt and pepper
6 sweet peppers chopped (mix of colors if you like)
14 oz can chopped tomatoes
4 tablespoons red wine vinegar
sour cream to serve

In a large dutch oven saute the onions until soft then add spices and let cook another few min. Add the pork and toss to coat then add peppers, tomatoes, vinegar and water to pan to almost cover. Bring to a boil then cover and place in a 350 degree oven for 2-3 hours. You want the pork to be tender and falling apart. Serve over rice or noodles! - with a dollop of sour cream.
