Pantry Cookies - or what do you have on hand


I used a basic recipe for these oatmeal cookies and just mixed in some extras I had in the pantry and they were great! Feel free to add or subtract based on what you have on hand - get creative. Next time I'm going to try walnuts, dried cranberries and white chocolate chips...


Pantry Oatmeal Cookies made about 24

1/2 cup white flour
1/4 cup whole wheat flour (or use all white)
3/4 teaspoon baking soda
3/4 teaspoon baking powder
1/4 teaspoon salt
6 tablespoons butter, room temp
5 tablespoons sugar
5 tablespoons brown sugar
1 egg
3/4 teaspoon vanilla
3/4 cup oatmeal (not instant)
Add in options:
use 1 cup chips (I used 1/2 peanut butter and 1/2 semi sweet chocolate)
1/2 cup chopped nuts (I used pecans)
1/2 cup unsweetened coconut (you could skip this, but it was good - just added more texture)

Whisk together dry ingredients. In mixer beat butter with sugars until fluffy. Add egg and vanilla. Stir in flour mixture and beat until smooth. Stir in your options. Form into about 24 large balls and bake at 350 degrees for about 12 min, cool on rack.

Post Note: the cookies on the bottom are the 2nd batch with the white chocolate chips, 1/2 cup dried cranberries, 1/2 cup walnuts and the 1/2 cup coconut - OMG - even better than the first batch!!!
