See, I really have been cooking, just haven't had a moment to blog about it! I made these little coconut tartlets for Thanksgiving at Jim & Paula's - doesn't that seem like forever ago?! Paula loves a coconut cream pie - but that's never been a favorite of mine so to compromise I made these. The really lovely thing about them is that they can be made ahead and then filled when serving - and it's just a little bite of something sweet - not as overwhelming as a piece of pie - especially on the big over-eating turkey day! I think these would be perfect on Easter too.
