This easy frittata was so good - and kind of a "clean the fridge out" recipe. I just used what I had on hand and I always have some good fresh eggs - and there you have your anytime meal. You can use onions or peppers or even a bit of spinach - this is just what I happened to have and it was delicious!
Frittata serves 2
couple tablespoons olive oil
couple small potatoes sliced about 1/8 inch
1/2 of a yellow pepper chopped
1 fresh green garlic bulb chopped (love these right now no need to peel - looks like a green onion)
few stalks of asparagus cut into little rounds
4 eggs
sprinkling of Parmesan if you like
Heat up a non stick skillet and then add the olive oil. (This pan is a great one I have that isn't really the Teflon coated type it's cast iron- but it's so well seasoned and as long as you have it really hot then add the oil, nothing will stick) Pour in your potatoes and peppers and onions if using as they need a little longer to cook. Toss them around over medium heat and when the potatoes are almost tender add the green garlic and asparagus and toss for another couple min. Spread around the pan evenly then pour over the beaten eggs. Let cook on this side on medium low then very carefully when it is mostly set, put a plate on top and flip it over then slide it from the plate back into the pan - that's the trickiest part! If you are worried about it just broil the top a couple mins instead. Serve as a yummy breakfast - or my favorite way is when I have a little leftover and I warm it and serve on some good bread with a little mayo - like a Spanish Tortilla d'Espanol sandwich! Also a good last minute dinner when you think you have nothing to eat in the fridge.
