Healthy snack or lunch

I saw this recipe in Food and Wine and thought I would give it a try. Wow - it was great! I had these lovely purple on the outside, bright orange on the inside carrots and it is a keeper! Of course I skipped the cilantro and didn't use the yogurt and it was perfect to me - and Rich! Barely cook the carrots so they still have a bit of crunch. I'm hungry, I think I'll pop into the kitchen and do this again!

Carrot and Hummus Sandwiches serves 2

Coarsely grate 2-4 carrots depending on their size. In a skillet heat a tablespoon of olive oil and add a chopped garlic clove (I'm using fresh garlic right now - yeah!) then add the carrots a few caraway seeds s&p and cook about 3 min. Toast some good bread, I had a wonderful olive loaf, and spread with some hummus and top with your carrots. I served open faced with a little drizzle of olive oil.
