I found this recipe a long time ago in Saveur magazine and when I'm not feeling well it's the perfect supper to make. And I love the name Grandmaw Peacock's Chicken and Rice. A little like baby food really, but flavorful. Not something I would serve to guests, unless they were sick of course, but it's perfect for a loved one who's feeling under the weather. I had a bunch of rainbow carrots so I cut them up and added them when I put in the rice. I also prefer to remove the chicken, strain the broth and then pull the chicken off the bone and return to the pot with the rice; then you don't have to pick out the bones while eating. Ahhh, feeling better already.
