Last of the cookie weeklies...

Ah, every good thing must come to an end - at least until next summer in Healdsburg! This tuesday is the final "Music on the Plaza" and I'm pulling from the freezer already made cookie dough for tonight. These were the final ones from last week. Saved the best for last.

Coconut Macadamia Chocolate Chip Cookies about 2 dozen

1/3 cup sugar
1/3 cup brown sugar
1/2 cup butter room temp
1 egg
1 teaspoon vanilla
1 and 1/4 cup flour
1 cup oats
1/2 cup flaked sweetened coconut
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup macadamia nuts
1 cup milk chocolate chips

Beat butter with sugars until fluffy, then add egg and vanilla. Stir together flour, oats, coconut, soda and salt. Mix this all in gently. Finally stir in the nuts and chips. Bake in heaping teaspoons at 350 degrees for about 10-12 min.
