Quick - what's for dinner?

Doesn't that question get tiring? Sometimes you just have to whip it up - and that's what I did. Doesn't even seem like leftovers.

Leftover Pasta Frittata serves 2

couple cups or so of leftover spaghetti or capellini with tomato sauce
4 eggs
1/2 cup parmesan
olive oil

Mix in a bowl the pasta, eggs and parmesan. In a hot skillet add some oil and then pour in the mixture. Let cook on one side until browned on the bottom. Carefully slide out onto a plate then top the plate with the pan and flip it back over - good luck! Cook until eggs are set and serve sliced into wedges.
